How to catch Ditto/What Pokemon transform into Ditto in Pokemon Go? (Let's Go, Meltan Quest Part 3)
As of March 2019 these pokemon have the possibility of turning into a ditto after you catch it:
Pidgy, Ratatta, Zubat, Paras, Ghastly, Sentret, Yanma, Hoothoot, Zigzagoon, Whismur, Gulpin, Mankey, Remoraid, and even Meltan
